Mashed Raclette Broccoli

Ingredient

Serves 4


500 g broccoli
Salt
30 g unsweetened cornflakes, alternative: spelt crunchy muesli
5 slices of raclette cheese

Quark dip
250 g low-fat quark
1 tbsp olive oil
1/2 lemon, juice
1/2 bunch parsley
1/2 bunch chives
Salt and pepper
1/2 tsp honey

Preparation

In the oven

Preparation time: 30 mins

1. Preheat oven to 180°.

2. Blanch the broccoli florets in salted water for 3-4 minutes (not too long, so the broccoli remains crunchy).

3. Place the broccoli florets on a baking tray lined with baking paper and flatten with a ladle or glass.

4. Crumble the cornflakes and sprinkle over the top. Grate the raclette cheese and sprinkle over the top.

5. Bake the broccoli for 10 minutes, then turn it over (so the cheese is on the bottom) and bake for another 10 minutes.

6. Meanwhile, mix all the quark ingredients together.

7. Take the broccoli out of the oven, arrange on a platter and serve with the quark dip.

Tip: You can save time making the quark dip if you use dried parsley and chives from the spice rack.
