Raclette fig crostini

Ingredient

Serves four


Crostini:
5 slices of raclette cheese
1 baguette (makes approx. 22 slices)
1 tbsp olive oil
6 fresh figs
2-3 sprigs of fresh thyme

Chili oil:
6 tbsp olive oil
1 organic lemon, juice and zest
1 tsp liquid honey
1 chili, finely chopped; alternatively: chili or cayenne pepper flakes
1 pinch of salt

Preparation time: approx. 20 minutes including baking time

1. Preheat oven to 200 degrees. Cut the baguette into slices, brush with a little olive oil and bake in the oven for 3-4 minutes.

2. In the meantime, mix the olive oil with the lemon juice, honey, chili or cayenne pepper and salt. Wash the figs and cut into quarters (with the skin). Coarsely grate the raclette cheese.

3. Drizzle the toasted slices of bread with a little chili oil, spread the grated raclette cheese on top and cover with 1 fig slice. Then drizzle a little more chili oil over the figs. Put the crostini back in the oven for another 5 minutes until the raclette cheese has melted.

4. Grate the lemon zest over the crostini before serving.
